Seared Scallops with Pineapple Salad |

Ingredients:

3pcs large scallops

1tsp salt
-
2T Cajun Spice Mix

1tsp salad oil
- ¼ cup julienne pineapple
-
¼ cup julienne fennel
-
¼ cup julienne red onion
-
¼ cup julienne red bell pepper
-
¼ cup julienne snow peas
-
1tsp orange zest
-
1tsp salad oil
-
1tsp cane vinegar
-
1tsp orange juice
-
Pinch of ground cardamom
1) Season the scallops with salt and Cajun seasoning
2) Heat a sauté pan on high and add in the salad oil
3) When the oil begins to lightly smoke add in the scallops
4) Sear for 2 minutes and turn the scallops over and turn off the
heat, the remaining heat in the pan will help the scallops cook
5) While the scallops are finishing the cooking process, start on the pineapple salad
6) In a medium sized bowl, combine the remaining ingredients and toss lightly
7) Place the salad mixture in the center of a plate and top with the cooked scallops
