Serving for one, about 7/8 ounces snapper
Steam Opakapaka or snapper of choice 6 to 7 minutes
Sautée the following items together with butter and or olive oil
- diced ginger - 1/4 TSP
- julienned red pickled ginger - 1 ounce
- sliced red onion- 1ounce
- quicky chopped choy sum - 3 ounce
- quickly chopped bok choy - 3 ounce
- add 1 ounce soy sauce
- TSP thai fish sauce
reduce the above and plate, place steamed snapper on top.
top fish with julienned red/yellow bell peppers, carrots - 1 ounce each
4 sprigs of chinese parsley
Meanwhile in warm sautée pan add:
- 2 ounces peanut oil
- 1 TSP sesame oil
Gradually increase heat until smoking and pour hot oils over the plated items.
