1oz Hanapepe Salt
2oz Butter
1pc Rosemary
Method-
Heat pan and add oil season one side of beef and sear on season side first and then other until Medium Rare add butter and rosemary and base steak with butter then remove from pan and rest before serving.
Sauce
2oz Red Wine
3oz Veal Demi
1oz Butter
Method-
Using pan from beef deglaze with red wine and add veal demi and finish with butter
Potato Hamakua Mushroom Gratin
3pc Potatoes (Slice thin)
2oz Alii Mushroom (Slice thin)
2oz Shitake Mushroom (Slice thin)
6oz Asiago Cheese
8oz Cream
Method-
Layer ingredients starting with Potato then mushroom, cheese, and then
cream. Making four layers ending with cheese cover with foil and bake
at 350 for 35mins and remove foil for 10 mins.allow to set for 30mins
cut and serve
Wilted Kailani Salad
1pc Kailani Baby Romaine(cut in half)
2pc Cherry tomato
Method-
Heat sauté pan add olive oil and start with tomatoes when tomatoes are
wilted add lettuce and toss quickly and season remove from pan and
