Grilled N.Y. Steak with Maui Onion Puree and Miso Wasabi Butter

INGREDIENTS:

  • 12 oz N.Y. steak

  • 1 Maui onion (large dice)

  • 1 cup oil

  • 1 teaspoon miso paste

  • 1 teaspoon wasabi (or to taste)

  • 2 oz stock

  • 5 teaspoon minced garlic

  • teaspoon minced ginger

  • 1 oz butter

  • 1 teaspoon sesame oil

  • 1 tablespoon mirin


METHOD:

  • Salt and Pepper both sides of steak and place on a well oiled grill, cook for about 2-3 minutes and cross, cook for another 2 minutes

  • Flip steak and do the same as the other side

  • While steak cooks, heat sesame oil and sauté garlic and ginger until golden brown

  • Deglaze pan with mirin, add stock and miso

  • Reduce the miso and remove from heat

  • Add wasabi and slowly add butter, making sure to whisk the butter well


MAUI ONION PUREE:

  • Place onion and oil in a pan and roast at 350 for about an hour (make sure to check every 20 minutes)

  • Once onion is soft and lightly caramelized, strain oil

  • In a blender, puree onion for a minute on high until smooth


PLATING:

  • Mirror center of plate with onion puree

  • Place vegetables in middle and set steak on top of vegetable

  • Glaze the steak with butter and garnish with fried leeks and diced chives
