Aloun Farms Romaine Caesar Salad |

Serves 6-8
Ingredients:
- 4 pieces heart of Romaine Lettuce
- 8 pieces of Croutons
- 8 strips of flour Tourtiere about 1 inch wide and 9-10 inches long
- 1 egg wash
- 1 cup shredded Parmesan cheese
- 4 egg yolks
- 2-3 large cloves roasted garlic
- 2-3 pieces anchovies
- 1 tablespoon Worcheshire sauce
- 1 tablespoon lemon juice
- 1/2 tablespoon Dijon mustard
- 2/3 tablespoon Tabasco sauce
- 2 cups olive oil
- salt and pepper to taste
Preparation
~ Clean and rinse the Romaine lettuce and keep cool in the refrigerator
~ Brush egg wash at one end of the Tourtiere and fold it over like a
ring and bake in a 300 degree oven until the Tourtiere turn to a light
brown (Crispy) about 2-3 minutes, set aside.
~ In a food mixture combine egg yolks, garlic, anchovies, lemon juice,
Dijon mustard, and Tabasco sauce and mix until all ingredients
incorporate. Slowly add on the olive oil and mix until the dressing
turns to a creamy.
~ Add dressing and Parmesan cheese to the lettuce and arrange the
lettuce back to the original like a bouquet and put in the crispy
Tourtiere ring and garnish with croutons.
Tip: you may add any cooked chicken, shrimp or fish and serve as a lunch entrée.
