Sinful & Simple Truffles

• 1 cup heavy cream
• 8 ounces bittersweet or unsweetened chocolate,
• chopped into small pieces
• ¼ cup unsalted butter, cut into small pieces
• 2 tablespoons brandy, cognac or liqueur of choice

• 4 Filet of Salmon about 6-8 OZ each clean and remove pin bones
• 4 cups mashed potato
• ½ lb Asparagus blanched
• ½ lb King oyster mushroom slices

• 1 Filet of Salmon about 3 lbs. Skinned and remove the pin bones
• 3 tablespoon of fresh dill, chopped
• 6 tablespoon of sugar
• 3 tablespoons of salt

• 12 oz. of fresh Halibut Filet, cut to a 2 oz portion
• salt and pepper to taste
•  6 strips of Nori (half inch wide and about 3 inches long)
• 6 Slices red jalapeño pepper
